Nutritional Yeast
Nutritional yeast (or “nooch,” as the die-hards call it) is a deactivated form of saccharomyces cerevisiae yeast, grown on molasses, then harvested, washed, and dried with heat to kill the yeast cells. That process locks in nutrients and creates those thin golden flakes with their trademark nutty, cheesy, umami taste.
It’s naturally:
- High in B-vitamins (especially fortified versions with B12)
- A good source of complete plant protein (≈ 4 g per 2 Tbsp)
- Low in sodium and fat
- Gluten-free and vegan
As a complete protein (rare in plant sources), nutritional yeast adds substance as well as flavor. You can think of it as a “protein-based seasoning.”
While not meant to replace your main protein source, it is a great boost to everyday meals—especially vegetarian dishes that might be a little light on amino acids.

- Vegan mac ‘n’ cheese sauce (cashews + nutritional yeast + garlic + lemon + broth)
- Savory protein dips with Greek yogurt or white beans
- Soup thickeners — a tablespoon or two stirred into tomato or potato-leek soup makes it richer.
Protein Boosts
- Egg scrambles or tofu scrambles: Add 1–2 Tbsp for flavor and extra amino acids.
- Avocado toast: Sprinkle on top for a nutty layer of umami.
- Smooth soups or stews: Stir in after cooking to retain the B-vitamins.
Homemade Seasoning Blends
- Combine with garlic powder, onion powder, turmeric, and black pepper for a savory “super-blend” to shake over veggies, air-popped popcorn, or grilled chicken.
